Spicy Chicken Noodle Stir-fry (Print Version)

# Ingredients:

→ Main/Poultry

01 - 12oz pasta of your preference
02 - 1lb boneless chicken breast
03 - 2 tablespoons reduced salt tamari or soy sauce
04 - 1 tablespoon natural honey
05 - 1 tablespoon spicy chili sauce
06 - 1 tablespoon nutty sesame oil
07 - 1/2 cup chopped scallions (white sections mainly)
08 - 1 tablespoon crushed garlic

→ Dressing

09 - 1/2 cup reduced salt tamari or soy sauce
10 - 1 tablespoon creamy peanut butter
11 - 2 tablespoons mild rice vinegar
12 - 2 tablespoons spicy sambal sauce
13 - 1.5 tablespoons dark brown sugar
14 - 1/4 teaspoon powdered ginger
15 - 1.5 tablespoons fragrant sesame oil
16 - 1/2 teaspoon crushed red pepper
17 - 3 tablespoons plain water
18 - 1 tablespoon thickening cornstarch

→ Topping

19 - 1/3 cup smashed peanuts
20 - 1/3 cup sliced scallions (green parts mainly)

# Instructions:

01 - Slice chicken breast into bite-sized 1-inch chunks. Mix them with tamari/soy sauce, honey and spicy chili sauce in a container. Stir well and let sit anywhere from 30 mins up to 2 hours in the fridge.
02 - Get some salty water bubbling and toss in your pasta. Cook until it's just how you like it. Drain in a colander and put aside for now.
03 - Stir all dressing stuff together except the water and cornstarch until everything's completely blended.
04 - Warm up your sesame oil in a pan on medium-low. Throw in the white scallion parts and cook them for about 2-3 mins. Add your garlic and let it cook another minute.
05 - Toss your chicken into the pan (throw away any leftover marinade). Cook about 2-3 mins each side until the meat hits 165°F inside.
06 - In a different pot, warm the dressing on low heat. Mix the cornstarch with water to make a smooth liquid, then pour it into your dressing. Let it get a bit thick.
07 - Drop your cooked pasta into the thickened dressing and toss it around. Add your chicken and mix it all up. Let everything hang out together for a minute or two.
08 - Sprinkle peanuts and green scallion bits on top. Eat right away, maybe with some broccoli or sliced peppers if you want.

# Notes:

01 - You can make this meal earlier and warm it up later, but just know the pasta might soak up more sauce while sitting.
02 - Make it more or less spicy by playing with the amount of chili sauce and red pepper bits you use.
03 - Try using traditional Chinese egg noodles for an even tastier version if you can find them.
