Spicy Buffalo Chicken Balls (Print Version)

# Ingredients:

01 - 1 lb ground chicken
02 - ½ cup buffalo sauce, split in half
03 - 1 large egg
04 - ¼ cup green onions chopped thin, extra for topping
05 - ¼ cup carrots diced small
06 - ⅓ cup almond flour or ¼ cup panko bread crumbs
07 - ½ teaspoon garlic powder
08 - ½ teaspoon onion powder
09 - ½ teaspoon sea salt
10 - ¼ teaspoon black pepper
11 - ranch or blue cheese dressing and crumbles for serving
12 - celery and carrot sticks on the side (if wanted)

# Instructions:

01 - Heat your oven to 400°F and put parchment paper on a baking sheet.
02 - Grab a big bowl and mix the ground chicken, ¼ cup buffalo sauce, egg, green onions, carrots, almond flour, garlic powder, onion powder, sea salt, and black pepper until well combined.
03 - Take small amounts of the chicken mix with a cookie scoop or spoon and roll them into balls with your hands.
04 - Put all the meatballs on your lined baking sheet and cook for 18-20 minutes.
05 - Take them out and pour the other ¼ cup buffalo sauce over them, giving them a gentle toss to cover all sides.
06 - Add some ranch or blue cheese dressing on top and sprinkle with fresh green onions before eating.

01 - You'll end up with about 12-15 standard meatballs or around 25 tiny ones.
