Spanish Cheeseboard Pizza Last (Print Version)

# Ingredients:

→ Dough Base

01 - 1 prepared pizza dough

→ Cheeses

02 - 1.5 cups grated mozzarella cheese
03 - Shaved Manchego cheese, for garnish

→ Toppings

04 - Canned crushed tomatoes
05 - Spanish chorizo slices
06 - Fig jam
07 - 1 shallot, thinly sliced
08 - Minced fresh parsley

# Instructions:

01 - Preheat oven to 220°C with a pizza stone or steel, or as directed by the pizza dough package.
02 - On a lightly floured pizza peel, roll, spin, or stretch the dough into a round base.
03 - Spread approximately three-quarters of the mozzarella evenly over the dough. Add small dollops of crushed tomatoes; reserve excess tomatoes for another use.
04 - Arrange Spanish chorizo slices across the pizza. Sprinkle the remaining mozzarella over the top. Add dollops of fig jam, then distribute the shallot slices.
05 - Transfer the pizza to the preheated oven and bake for 15-20 minutes, or until the crust is golden and puffed and the cheese is melted and bubbly.
06 - Immediately after baking, top with shaved Manchego and minced parsley. Slice and serve warm.

# Notes:

01 - If you prefer a crispier crust, bake on a preheated steel or stone and allow extra time for preheating.
02 - Leftover crushed tomatoes can be refrigerated in an airtight container for future use.
