Preheat oven to 220°C with a pizza stone or steel, or as directed by the pizza dough package.

On a lightly floured pizza peel, roll, spin, or stretch the dough into a round base.

Spread approximately three-quarters of the mozzarella evenly over the dough. Add small dollops of crushed tomatoes; reserve excess tomatoes for another use.

Arrange Spanish chorizo slices across the pizza. Sprinkle the remaining mozzarella over the top. Add dollops of fig jam, then distribute the shallot slices.

Transfer the pizza to the preheated oven and bake for 15-20 minutes, or until the crust is golden and puffed and the cheese is melted and bubbly.

Immediately after baking, top with shaved Manchego and minced parsley. Slice and serve warm.
