Simple Skillet Zucchini and Mushrooms (Print Version)

# Ingredients:

→ Basic Ingredients

01 - 1 small yellow onion, diced up nice and small
02 - Two small zucchinis, sliced thin into half circles
03 - One pound of tiny button mushrooms, cleaned off and dried

→ Seasonings & Aromatics

04 - A pinch of salt and some freshly cracked pepper to season
05 - Fresh garlic cloves, 3-4, minced finely
06 - A couple teaspoons of freshly chopped herbs or a teaspoon dried - oregano and thyme are my go-to choices

→ Cooking Liquids

07 - 3 tablespoons of butter
08 - Just under a cup (about ¼ cup) of veggie broth
09 - A tablespoon of olive oil

→ Toppings

10 - A handful of chopped parsley
11 - A sprinkle of shredded parmesan cheese

# Instructions:

01 - Grab a skillet and put it over medium-high heat. Drizzle in the olive oil and toss in about half a tablespoon of butter. Wait until it’s sizzling and ready to go!
02 - Toss your zucchini slices into the hot skillet. Sprinkle some salt and pepper over the top and cook for 3-4 minutes, just until you can pierce them easily with a fork. Move them to a plate when done and wipe the skillet if there’s extra liquid left.
03 - In the same pan, melt the leftover butter over medium-high heat. Throw in the diced onion and cook it for about 2 minutes until it starts to soften up.
04 - Toss those mushrooms into the pan and let them brown up for about 5-7 minutes. Stir them every now and then so they brown evenly and get tender.
05 - Add the garlic and the herbs to the pan. Cook for just about 20 seconds until it smells amazing. Toss the zucchini back in, pour in the veggie broth, and let it all simmer together for a couple of minutes. Taste and season as needed, then top with the parsley and a good sprinkle of parmesan before serving.

01 - This recipe is a simple and healthy side dish that works great with most main meals.
02 - Fresh herbs are always a hit here, but dried options like oregano and thyme work too.
03 - Make sure those mushrooms are really dry before cooking. It makes a big difference!
