Crab Stuffed Shrimp (Print Version)

# Ingredients:

→ Shrimp Prep

01 - 16-20 count shrimp, about 2 lbs, cleaned and sliced open (butterfly style)
02 - 1 tbsp olive oil
03 - 1 teaspoon Old Bay seasoning
04 - 2 teaspoons smoked paprika
05 - 1 tsp garlic powder
06 - 1/2 tsp black pepper
07 - 1/2 tsp Italian herbs
08 - 1 tsp onion powder

→ Filling Mixture

09 - Cooked spinach, well-drained and chopped, 1 cup
10 - Optional: 8 oz crab meat, lump or claw type
11 - 6 oz canned artichokes, chopped and strained
12 - 1 cup mayo (swap with cream cheese or sour cream if you'd like)
13 - 1 tbsp Dijon mustard
14 - 1 tbsp lemon juice (freshly squeezed)
15 - Zest from one lemon
16 - 1 tbsp minced garlic
17 - 8 oz of grated cheese (try a mix of pepper jack and mozzarella for best results)
18 - 1 tsp Worcestershire sauce
19 - 1/2 cup breadcrumbs, Italian-style
20 - 1 tsp dried herb mix

→ Dill Garlic Butter

21 - 4 tablespoons butter (unsalted)
22 - 1 tbsp of finely chopped garlic
23 - 1 tsp fresh dill, minced

# Instructions:

01 - Set your oven to 350°F (or 175°C) to start heating up.
02 - Grab a bowl and add the shrimp. Drizzle the olive oil, then sprinkle the paprika, garlic powder, Old Bay, black pepper, onion powder, and Italian seasoning. Toss them lightly so every piece gets covered.
03 - In a different bowl, mix the crab meat (if using), drained artichokes, chopped spinach, mayo, mustard, lemon juice, zest, breadcrumbs, cheese, garlic, Worcestershire sauce, and herbs. Blend it all together until it's smooth and everything's mixed in evenly.
04 - Spread your shrimp open on a baking sheet. Scoop a bit of the filling onto each one and press gently to hold it all in place.
05 - Slide the shrimp into your preheated oven. Bake them for around 15-20 minutes. You'll know they're done when the shrimp turn pink and the filling gets bubbly and golden on top.
06 - As the shrimp bake, get a small saucepan. Melt the butter on medium heat, then stir in the minced garlic and cook for about a minute. Take off the heat and mix in the fresh dill.
07 - Once the shrimp are out of the oven, pour that warm garlic butter sauce over them right before eating. They're great as a starter or main dish.

# Notes:

01 - These stuffed shrimp are fancy enough for holidays or dinner parties, but they're easy to make.
02 - Skip the crab if you want and fill them with just the spinach and artichoke mix.
03 - Lighten them up by using low-fat Greek yogurt or reduced-fat cream cheese instead of mayo.
