01 - 1 pound assorted mushrooms (button, cremini, or preferred variety), cleaned
02 - 1 tablespoon vegetable oil
03 - Salt, to taste
04 - Black pepper, freshly ground, to taste

05 - 1/4 cup unsalted butter
06 - 2 cloves garlic, finely chopped
07 - 1 teaspoon fresh thyme leaves, chopped
08 - 1 tablespoon freshly squeezed lemon juice
09 - Salt, to taste
10 - Black pepper, freshly ground, to taste

# Directions:

01 - Preheat oven to 400°F. Toss cleaned mushrooms with oil, salt, and pepper. Arrange in a single layer on a baking sheet. Roast for approximately 20 minutes or until mushrooms are golden and beginning to caramelize, stirring once halfway.
02 - Melt butter in a skillet over medium heat. Continue to cook until butter develops a nutty aroma and turns a light golden brown, swirling the pan occasionally to prevent burning. Remove from heat.
03 - Immediately add chopped garlic, thyme, and lemon juice to the browned butter. Stir to blend and infuse the flavors.
04 - Toss roasted mushrooms thoroughly in the browned butter mixture. Adjust seasoning with additional salt and pepper to preference. Serve warm.
