Ricotta Chocolate Cake (Print View)

# What You'll Need:

01 - 1 box (15.25 oz) of chocolate cake mix
02 - Whatever the cake mix instructions call for
03 - 2 lbs ricotta cheese, fresh
04 - 4 eggs, room temperature
05 - 3/4 cup granulated sugar
06 - 1 tsp vanilla extract
07 - 1 box (3.9 oz) instant pudding mix, chocolate flavor
08 - 1 1/2 cups milk, chilled
09 - 1 tub (8 oz) whipped topping, thawed

# Directions:

01 - Set your oven to 350°F (175°C). Coat a 9x13 baking dish evenly with grease.
02 - Make the chocolate cake mix by following the box directions. Pour the batter into the greased dish.
03 - Mix ricotta, eggs, sugar, and vanilla in another bowl. Beat until smooth, then gently spoon this over the cake batter.
04 - Pop it into the oven for 50-60 minutes. Stick a toothpick in the middle—if it comes out clean, it's ready. Let it chill completely.
05 - Take the pudding powder and mix it with the cold milk. Stir slowly until it thickens. Fold in the whipped topping gently.
06 - Apply the pudding mix evenly over the cooled cake. Chill in the fridge for at least 4 hours or even better, overnight.
