Set up your food processor with the blade for shredding. Shred beets into small bits until you’ve got about a cup. Pour in 4 cups of water and blend until smooth. Use a sieve to strain the liquid into a big bowl, pressing the pulp with a spoon to get all the juice out.

Mix together the beet juice, lemon juice, sweetener, and 2 cups of water in a large pitcher. Taste and tweak it—balance the sweetness, tang, or water to your liking. Chill in the fridge until it’s nice and cold. When ready, serve in a glass filled with ice and savor it!
