Cozy Ranch Veggies (Print Version)

# Ingredients:

→ Base Vegetables

01 - 1 lb red baby potatoes, cut in half
02 - 1 lb fresh green beans
03 - 1 cup yellow onions, chopped finely
04 - 2 tbsp garlic, minced

→ Liquids & Beans

05 - 1 cup broth made from vegetables
06 - 1 cup water or use extra broth
07 - 15.5 oz can of white cannellini beans, cleaned and drained
08 - 2 tbsp apple cider vinegar
09 - 2-3 tsp of Dijon mustard

→ Seasonings

10 - 3/4 tsp salt from the sea
11 - 1 tsp onion powder
12 - 1 tsp dried parsley
13 - 2 tbsp onion flakes, dried
14 - 1/4 tsp black pepper
15 - 1/4 tsp smoked paprika
16 - 2 tsp nutritional yeast
17 - 1 1/2 tsp garlic powder
18 - 1 tsp dried chives
19 - 1/4 tsp dry mustard powder
20 - 1/4 tsp dried dill
21 - 1/4 tsp baking soda

# Instructions:

01 - Mix all the dry herbs and spices (leave out salt and pepper for now) in a small bowl, then set it aside.
02 - Heat up onions in a big pot over medium-high heat for about 5-7 minutes, stir often. If it gets dry, pour in some broth. Add in garlic and sauté for 1 more minute.
03 - Pour in the broth, water, nutritional yeast, and the spice mix you made. Let it come to a boil, then lower it to a simmer. Stir in the baking soda.
04 - Place potatoes in the pot first, followed by the green beans on top. Put the lid on and cook on low-medium heat for around 15 minutes.
05 - Throw in some salt, pepper, vinegar, mustard, and beans. Let it cook without the lid for another 5-10 minutes until the potatoes are soft. Let it cool for 7-10 minutes before eating.

01 - Keep potatoes fully covered in the broth for smooth cooking.
02 - Stays fresh in the fridge for up to 5 days.
