# What You'll Need:

→ Base Ingredients

01 - 2 tablespoons olive oil
02 - 8 ounces fresh shiitake mushrooms, thinly sliced
03 - 4 cloves garlic, finely chopped
04 - 2 tablespoons fresh ginger, minced or grated

→ Broth & Potstickers

05 - 6 cups vegetable broth
06 - 16-20 ounces frozen potstickers
07 - 2 tablespoons soy sauce

→ Fresh Vegetables & Finishing

08 - Fresh ground black pepper
09 - 2 teaspoons toasted sesame oil
10 - 3 baby bok choy, leaves separated
11 - 5 scallions, chopped thin

→ Optional Toppings

12 - Your favorite toppings like toasted sesame seeds, chili crisp, fried garlic, or furikake seasoning!

# Method:

01 - Heat up some oil in a big stockpot over medium-high heat. Add the mushrooms and let them cook until they’re nice and brown, stirring every now and then. When they’re golden, pour in another tablespoon of oil and stir in the ginger and garlic. Let that combo cook for a minute or two until you can really smell it.
02 - Add the broth and soy sauce to the pot. Stir it up, get it boiling, and then drop in the frozen potstickers, bok choy, and half the scallions. Let everything cook together for about 3-4 minutes until the potstickers are warmed through.
03 - Remove the pot from heat. Stir in your sesame oil and a few twists of black pepper. Take a taste and see if it needs more soy sauce or seasoning. Serve up the soup into bowls, sprinkle on the rest of your scallions, and add any of your favorite toppings.
