Preheat oven to 204°C (400°F). Line baking trays with parchment paper and set aside.

Unfold each sheet of puff pastry and cut into nine equal squares.

In a bowl, combine pulled pork with barbecue sauce and toss until evenly coated.

Place a portion of the pulled pork mixture and shredded cheddar cheese in the center of each pastry square.

Fold two opposite corners of each square over the filling and press to seal the edges securely. Transfer to prepared baking trays.

Combine beaten egg with water to make an egg wash. Brush the surface of each pastry with the egg wash.

Bake in preheated oven for 15-18 minutes, until pastry is golden brown. Cool briefly and serve warm or at ambient temperature.
