02 - 3 medium ripe tomatoes, sliced
03 - 4.2 ounces herbed cream cheese (such as Boursin or homemade)
04 - 1 tablespoon fresh basil, chopped
05 - 1 tablespoon fresh chives, chopped
06 - 1 tablespoon olive oil
07 - 1 large egg, beaten
08 - Salt, to taste
09 - Freshly ground black pepper, to taste

# Directions:

01 - Preheat oven to 400°F. Line a baking sheet with parchment paper.
02 - Roll out the puff pastry on a lightly floured surface to eliminate seams and ensure an even layer. Transfer the pastry to the prepared baking sheet.
03 - Spread the herbed cream cheese evenly over the pastry, leaving a 1-inch border along the edges.
04 - Arrange the tomato slices in a single, even layer over the cheese. Sprinkle with chopped basil, chives, salt, and freshly ground black pepper. Drizzle evenly with olive oil.
05 - Fold the edges of the pastry inward to form a border. Brush the border with the beaten egg for a glossy finish.
06 - Bake in the oven for 22 to 25 minutes, until the pastry is golden and crisp. Allow to cool slightly on a rack before slicing and serving.

# Notes:

01 - For optimal flavor, choose fully ripe and firm tomatoes. Excess liquid from tomatoes can be dabbed with a paper towel prior to assembly to prevent soggy pastry.
