Cut 4 ghost shapes from each sheet to create 8 total. Arrange 4 ghosts on a parchment-lined baking sheet.

Spoon 2 tablespoons marinara sauce onto the center of each ghost base, leaving a 1/4-inch border. Top each with 3 to 4 pepperoni slices and 2 to 3 tablespoons shredded mozzarella cheese.

Use a round piping tip to punch out two eyes and a mouth in the remaining 4 ghost shapes. Place each top over a filled base and gently press the edges with your fingers to seal.

In a small bowl, whisk the egg and 1 tablespoon water together with a fork. Brush the tops of each ghost with the egg wash.
