Pomegranate Christmas Salad Honey (Print View)

# What You'll Need:

→ Candied Nuts and Seeds

01 - 1 1/2 cups raw walnut halves
02 - 1/2 cup hulled pumpkin seeds
03 - 1/3 cup honey or pure maple syrup
04 - 1/4 teaspoon chipotle powder
05 - Kosher salt, to taste
06 - Chili flakes, to taste

→ Salad

07 - 6 cups mixed salad greens
08 - 2 cups curly endive (frisée)
09 - 1 to 2 apples or pears, chopped
10 - 2 avocados, sliced
11 - 2 cups pomegranate seeds
12 - 1 cup crumbled cheese (blue, goat, or feta)

→ Honey Mustard Dressing

13 - 1/3 cup extra-virgin olive oil
14 - 1/4 cup balsamic vinegar or apple cider vinegar
15 - 2 teaspoons Dijon mustard
16 - 2 tablespoons honey
17 - 1 tablespoon fig preserves
18 - 2 teaspoons grated orange zest
19 - 2 tablespoons orange juice
20 - Kosher salt, to taste
21 - Freshly ground black pepper, to taste

# Directions:

01 - Preheat oven to 375°F. Line a baking sheet with parchment paper. Toss raw walnut halves and pumpkin seeds in a medium bowl with honey or maple syrup, chipotle powder, kosher salt, and chili flakes. Spread in an even layer on prepared baking sheet.
02 - Bake for 15 minutes, stirring once halfway, until the nuts and seeds are fragrant and toasted. Remove from oven, spread in a single layer, and sprinkle immediately with flaky salt. Allow to cool completely.
03 - Place mixed salad greens and curly endive in a large salad bowl. Add chopped apples or pears, sliced avocado, and pomegranate seeds. Top with crumbled cheese.
04 - Add cooled candied walnuts and pumpkin seeds over the salad. Gently toss to combine all ingredients for even distribution.
05 - Combine extra-virgin olive oil, balsamic or apple cider vinegar, Dijon mustard, honey, fig preserves, orange zest, orange juice, kosher salt, and black pepper in a glass jar or bowl. Seal and shake vigorously or whisk until smooth and emulsified.
06 - Drizzle the orange balsamic dressing over the salad just before serving. Gently toss so the greens and toppings are evenly coated. Serve immediately.
