In a small bowl, dissolve the active dry yeast in half of the warmed water (at 110°F) and allow it to stand for 5 minutes until foamy.

Place the thinly sliced butter, granulated sugar, and kosher salt in a large bowl. Pour the remaining warm water over the mixture and let stand while the yeast is activating.

After 5 minutes, whisk the softened butter mixture until partially combined. Add the lightly beaten egg yolk and the activated yeast mixture to the bowl.

Stir in the all-purpose flour until just combined and a dough is formed. Do not overmix.

Brush a 9 x 13 inch baking dish with 2 tablespoons of melted unsalted butter to coat thoroughly.

Evenly distribute the dough in the prepared dish. Cover with plastic wrap and let rest for 15 minutes to allow the dough to relax.

Set oven to 350°F (177°C) and allow to preheat while the dough is resting.

Remove plastic wrap, brush the dough surface with the remaining melted butter. Sprinkle evenly with shredded mozzarella, grated parmesan, garlic salt, and dried oregano.

Bake in the preheated oven for 28 to 31 minutes, or until the edges are deeply golden and cheese is bubbling.

Allow cheese sticks to cool in the pan for 10 minutes, then slice into 8 uniform portions.
