Pizza Chorizo Sandwich (Print Version)

# Ingredients:

→ Dough

01 - A whole pizza dough cut into four equal parts
02 - Cornmeal, half a cup
03 - All-purpose flour, one cup
04 - Enough olive oil to work with

→ Choripan

05 - Some slices of tomatoes (optional)
06 - Slices of mozzarella cheese, around 9-10
07 - Add 3 or 4 chorizo sausages
08 - Mayonnaise for serving, if you like
09 - Sliced jalapeños for a spicy kick (optional)

→ Chimichurri

10 - Chop about 3/4 cup parsley
11 - Mince 4 to 6 garlic cloves
12 - 1/4 cup of red wine vinegar
13 - Olive oil until you reach the texture you want
14 - Some salt, according to taste
15 - A tablespoon of red chili flakes

# Instructions:

01 - Turn on your pizza oven and warm it up to between 450°F and 500°F.
02 - Combine minced garlic, parsley, olive oil, chili flakes, vinegar, and some salt in a mixing bowl. Stir well and set aside for later.
03 - Place a cast iron pan in the oven to get it hot. Pop the sausages into the heated pan and cook for 10-12 minutes. Keep them warm once done.
04 - Divide the pizza dough into four sections. Roll out each piece into an 8-inch circle, using flour on your surface as needed.
05 - Put mozzarella on the flat dough rounds after drizzling some olive oil.
06 - Fold the dough over lightly to make a crescent shape. Brush them with olive oil and bake in the pizza oven about 10 minutes or until golden and the cheese melts.
07 - Cut up the sausages and tuck them into the baked bread pockets.
08 - Pile on chimichurri, jalapeños, tomato slices, and mayonnaise if you'd like. Best served right away, so dig in!
