Pepperoni Pasta with Cheese (Print View)

01 - 1/2 teaspoon of dried Italian herb mix
02 - 3 teaspoons of olive oil that’s extra virgin
03 - 3/4 teaspoon garlic powder
04 - 1 medium sweet onion, finely chopped
05 - 2 1/2 cups of chicken broth, low-salt
06 - A pinch (1/8 teaspoon) of crushed red chili flakes
07 - 3/4 cup of a marinara-style pasta sauce
08 - 5 ounces of mini pepperoni slices
09 - 2 cups of dried elbow macaroni pasta
10 - 3/4 teaspoon kosher salt

11 - 1/2 cup freshly grated Parmesan cheese
12 - 1/2 cup shredded Mozzarella cheese

# Directions:

01 - In a bowl, combine the broth, pasta sauce, garlic powder, salt, and Italian seasoning. Stir well and keep nearby.
02 - Heat olive oil in a big pan over medium-high heat. Toss in the chopped onion and cook until it’s softened, about 3 minutes. Add the mini pepperoni, stir it around for 1 minute until it softens slightly, then mix in the chili flakes.
03 - Stir your broth mix one more time and pour it into the pan. Bring everything to a boil, add the macaroni, and lower the heat to medium. Cover it and cook for 10-12 minutes, stirring occasionally so the pasta doesn’t stick.
04 - Once the pasta is cooked through, sprinkle on both cheeses. Stir until the cheese melts completely, and dig in right away.
