In a large oven-safe skillet or Dutch oven, heat olive oil and unsalted butter over medium heat until melted.

Add sliced onions and cook for 20 to 25 minutes, stirring occasionally, until deeply golden and softened.

Stir in minced garlic and sauté for an additional 2 minutes until fragrant.

Arrange bratwurst sausages amongst the caramelized onions in the skillet.

Pour in the beer and beef broth, then stir in the Dijon mustard. Season with salt and black pepper to taste.

Bring the mixture to a gentle simmer over medium heat.

Transfer the uncovered skillet to the preheated oven and bake for 30 to 40 minutes, until the bratwursts are fully cooked and flavours melded.

Serve bratwursts hot, spooning caramelized onions and sauce over the top. Garnish with chopped fresh parsley if desired.
