01 - 6 tablespoons unsalted butter, at room temperature
02 - 1/2 cup packed light brown sugar
03 - 1/8 cup granulated sugar
04 - 1 large egg yolk, at room temperature
05 - 1 teaspoon vanilla extract
06 - 3/4 cup plus 2 tablespoons all-purpose flour
07 - 1/2 teaspoon fine sea salt
08 - 1/2 teaspoon baking soda
09 - 4 Oreo cookies, chopped, plus extra for topping

→ Brownie Batter

10 - 4 tablespoons unsalted butter
11 - 1/3 cup semi-sweet chocolate chips
12 - 1/4 cup plus 1/8 cup granulated sugar
13 - 1 large egg, at room temperature
14 - 1 teaspoon vanilla extract
15 - 1/4 cup all-purpose flour
16 - 1/4 cup unsweetened cocoa powder
17 - 1/4 teaspoon fine sea salt

# Directions:

01 - Line an 8x8 inch square baking pan with parchment paper, allowing the edges to hang over all four sides. Preheat the oven to 350°F.
02 - Cream together the softened butter, light brown sugar, and granulated sugar for 2 minutes until light and fluffy. Incorporate the egg yolk and vanilla extract until smooth.
03 - Fold in all-purpose flour, sea salt, baking soda, and chopped Oreo cookies until just combined. Set the mixture aside.
04 - Melt the unsalted butter and chocolate chips together until smooth, then set aside to cool slightly.
05 - In a separate bowl, whisk together granulated sugar, egg, and vanilla extract for about 2 minutes until pale and fluffy. Gently stream in the melted butter and chocolate mixture and mix until just blended.
06 - Fold in all-purpose flour, unsweetened cocoa powder, and sea salt until just combined.
07 - Spoon 2-tablespoon sized portions of cookie dough into the prepared baking pan, distributing evenly. Fill the alternate spaces with brownie batter.
08 - Press down the tops of the cookie dough balls until even with the brownie batter. Sprinkle additional chopped Oreo pieces over the surface.
09 - Bake at 350°F for 25 to 27 minutes, or until cookie dough is golden and a toothpick inserted into the brownie comes out with moist crumbs. After 20 minutes, tent the pan loosely with foil to prevent over-browning.
