10 - 1 tablespoon oil, heated
11 - 1.33 teaspoon salt, divided
12 - oil, as needed for cooking

# Instructions:

01 - Combine thinly sliced onions, chopped ginger, green chilies, curry leaves, coriander leaves, and 1 teaspoon salt in a large mixing bowl. Mix thoroughly and let rest for 10 minutes to allow vegetables to release moisture.
02 - Incorporate gram flour, rice flour, chili powder, ajwain, heated oil, and remaining 0.33 teaspoon salt into the rested onion mixture. Squeeze and mix well until evenly combined.
03 - Allow the mixture to rest for another 10 minutes to ensure proper hydration and flavor development.
04 - Mix again, adding water gradually to achieve a thick, cohesive batter resembling traditional pakora mixture. Divide batter into four equal portions.
05 - Preheat waffle maker and lightly grease with oil. Place one portion of batter in the center, spread thinly using oiled hands, and drizzle oil on top. Cook until crisp and golden brown.
06 - Repeat cooking process with remaining batter. Serve waffles hot, garnished with chaat masala and fresh coriander leaves.
