Get your oven hot at 350°F (175°C). Put parchment paper on two baking trays.

Mix flaxseed with water in a small bowl. Wait about 5 minutes till it gets thick.

Throw oat flour, rolled oats, almond flour, baking powder, baking soda, cinnamon and salt in a big bowl. Mix them up well.

In another bowl, stir together your flax mix, almond butter, melted coconut oil, applesauce, maple syrup, vanilla and orange zest until smooth.

Add wet stuff to dry stuff and stir just enough to combine. Drop in chopped dates and fold them in gently.

Drop dough balls on your lined trays using a big cookie scoop or 1/4 cup. Keep them 2 inches apart. Bake for 20-23 minutes until edges turn light brown.

Let the cookies sit on the tray a few minutes. Then move them to a wire rack to cool all the way.

Put cooled cookies in an airtight box. They'll stay good for a week.
