Alabama Nutty Pecan Loaf (Print Version)

# Ingredients:

01 - 1 cup white sugar
02 - 1 cup dark brown sugar
03 - 4 eggs (room temperature)
04 - 120 ml cooking oil
05 - 120 ml butter, melted and cooled
06 - 375 g self-rising flour, sifted
07 - 1 teaspoon pure vanilla
08 - 200 g pecans, roughly chopped

# Instructions:

01 - Heat your oven to 175°C (350°F). Give a 23x33 cm (9x13 inch) baking pan a good coat of nonstick spray.
02 - Grab a big mixing bowl and mix your white sugar, dark brown sugar, eggs, melted butter, and cooking oil together until they're smooth.
03 - Add your sifted flour, pure vanilla, and the chopped pecans. Stir just enough to mix everything together.
04 - Empty your mix into the greased pan and stick it in the oven for about 30-35 minutes. It's done when you can poke it with a toothpick and nothing sticks.
05 - Take it out and let your bread sit in the pan for 10-15 minutes before you cut it up and serve.
