Combine chocolate chips, creamy peanut butter, unsalted butter, and vanilla extract in a large microwave-safe bowl.

Microwave the bowl for 60 to 90 seconds, or until the mixture begins to melt. Remove and stir until smooth.

Pour Chex corn cereal over the melted mixture and use a silicone spatula to gently fold until all pieces are fully coated.

Line a 9x13 inch baking dish with parchment paper or aluminum foil.

Evenly spread the coated cereal mixture in the prepared baking dish. Refrigerate for 60 to 90 minutes, or until fully set.

Remove from the refrigerator and cut into bars of preferred size. Place powdered sugar in a small bowl and toss each bar until thoroughly coated. Store finished bars in the refrigerator.
