01 - 2 cups sliced mushrooms, fresh (cremini or button)
02 - 2 cups chopped spinach, washed and ready
03 - 1 tablespoon olive oil
04 - 2 cloves garlic, finely chopped
05 - 1/4 teaspoon salt
06 - 1/4 teaspoon black pepper
07 - 1/2 teaspoon thyme, dried or fresh (if you want)
08 - 1 tablespoon butter (if you want)
09 - 1 tablespoon balsamic vinegar (if you want)
10 - Chopped fresh parsley (for topping)

# Instructions:

01 - Slice up your mushrooms after cleaning them. Chop the spinach into smaller, bite-sized chunks after washing.
02 - Put olive oil in a big skillet over medium heat. Throw in the mushrooms and cook them for 5-7 minutes until they get juicy and start browning. Stir them around now and then so they cook evenly.
03 - Toss the chopped garlic into your skillet and let it cook for a minute till it smells good. Add your spinach and keep cooking for 2-3 minutes, stirring a bit, until it shrinks down and gets soft.
04 - Sprinkle salt, black pepper, and thyme if you're using it over your mushrooms and spinach. If you want, mix in the butter and balsamic vinegar to make it tastier. Let it all cook together for another minute.
05 - Scoop everything into a dish for serving. Sprinkle fresh parsley on top and eat it while it's hot.

01 - Try adding a squeeze of lemon right before you eat for a zingy kick.
