01 - 3 pounds yellow potatoes, peeled and diced
02 - 1 small yellow onion, diced
03 - 2 teaspoons minced garlic
04 - 1 pound bacon, cooked and crumbled

→ Dressing and Seasoning

05 - 1 cup mayonnaise
06 - 1 cup shredded cheddar cheese
07 - 1 teaspoon onion powder
08 - 1 teaspoon garlic powder
09 - 0.5 teaspoon salt
10 - 0.5 teaspoon black pepper

→ Final Garnish

11 - 2 green onions, sliced

# Directions:

01 - Preheat oven to 350°F (177°C). Lightly coat a 9×13-inch baking dish with nonstick cooking spray.
02 - Add diced potatoes, yellow onion, minced garlic, cooked and crumbled bacon, mayonnaise, shredded cheddar cheese, onion powder, garlic powder, salt, and black pepper to the prepared baking dish. Mix thoroughly to ensure ingredients are evenly distributed. Mixing can also be completed in a bowl before adding to the dish.
03 - Cover baking dish with aluminum foil. Bake for 60 minutes or until potatoes are fork-tender.
04 - Remove foil and sprinkle with sliced green onions. Stir gently before serving for even flavor.

# Notes:

01 - For crispiest bacon, cook just before adding to the mixture. Freshly shredded cheddar will yield a better melt than pre-packaged blends.
