Mexican Layered Casserole (Print Version)

# Ingredients:

01 - 1 teaspoon taco seasoning
02 - 1 pound ground beef
03 - 1 can (15 ounces) corn, drained
04 - 1 can (15 ounces) black beans, rinsed and drained
05 - Salt and pepper as needed
06 - 1 can (10 ounces) tomatoes with green chilies, diced

07 - 1 cup sour cream
08 - 2 cups shredded cheddar cheese
09 - 1 package (8 ounces) cream cheese, softened

→ Additional

10 - 1 package (8 ounces) tortilla chips
11 - Green onions, chopped, for topping

# Instructions:

01 - Set your oven to 350°F (175°C). Cook the ground beef in a large pan over medium heat, stirring until browned all the way through. Drain any extra grease.
02 - Add the black beans, corn, diced tomatoes with green chilies, taco seasoning, salt, and a bit of pepper to the cooked beef. Stir everything and let it simmer for about 5 minutes.
03 - In a bowl, combine the softened cream cheese with sour cream, mixing until smooth and well blended.
04 - In a greased 9x13-inch baking dish, start with a layer of half the tortilla chips, followed by half the beef mixture, then half the cream cheese mix, and 1 cup of shredded cheddar. Repeat the layers and finish with the last bit of cheese on top.
05 - Cover the dish with foil and bake for 25 minutes. Take off the foil and bake for 10 to 15 minutes more, until the cheese on top is bubbly and golden.
06 - Let it rest for a few minutes before sprinkling with chopped green onions. Dish it out warm and enjoy!
