# What You'll Need:

→ Pastry

01 - 2 sheets puff pastry, thawed

→ Spinach Filling

02 - 2 cups fresh spinach, chopped
03 - 1 cup ricotta cheese
04 - 1/2 cup grated Parmesan cheese
05 - 1 teaspoon garlic powder
06 - 1 tablespoon olive oil
07 - Salt and freshly ground black pepper, to taste

→ Assembly

08 - 1 egg, beaten

# Directions:

01 - Set oven to 400°F (200°C) and line a baking sheet with parchment paper.
02 - Heat olive oil in a skillet over medium heat. Sauté chopped spinach until wilted, then cool slightly.
03 - In a bowl, combine wilted spinach, ricotta, grated Parmesan, garlic powder, salt, and pepper until mixture is smooth.
04 - Unfold the thawed puff pastry sheets and cut each sheet into 4 to 6 equal squares.
05 - Place 1 to 2 tablespoons of spinach filling in the center of each pastry square. Fold pastry into triangles or rectangles and press edges with a fork to seal.
06 - Brush the tops of the filled pastries with beaten egg to ensure a golden finish.
07 - Bake for 20 to 25 minutes, or until pastries are puffed and golden brown.
08 - Allow pastries to cool for 5 minutes before serving. Optionally, serve with tzatziki or marinara sauce.
