11 - 2 cups prepared mashed potatoes
12 - 2 tablespoons unsalted butter, softened
13 - 1/4 cup heavy cream or whole milk
14 - Salt and freshly ground black pepper, to taste

→ Garnishes

15 - Cherry tomatoes, cut into small segments
16 - Fresh parsley or chives, finely chopped

→ Equipment

17 - 12-16 silicone or metal muffin liners

# Directions:

01 - Preheat oven to 375°F. Arrange silicone or metal liners in a standard muffin tin, or thoroughly grease the wells if not using liners.
02 - In a large mixing bowl, combine ground meat, breadcrumbs, milk, chopped onion, minced garlic, egg, ketchup, Worcestershire sauce, dried thyme or Italian seasoning, salt, and pepper. Mix gently until just incorporated.
03 - Divide meat mixture evenly between muffin cups. Gently press to compact and use a spoon to make a small indentation in the center of each portion.
04 - Bake for 20–25 minutes, or until centers are no longer pink and internal temperature reaches 160°F. Allow cupcakes to rest for several minutes after baking.
05 - In a bowl, combine mashed potatoes, softened butter, and cream or milk. Whip with a hand mixer until light and fluffy, then season to taste with salt and pepper.
06 - Pipe or spoon whipped potato topping onto each meatloaf cupcake to resemble frosting. Garnish with cherry tomato segments and a sprinkle of chopped herbs.
