Maple Bacon Carrots Glazed (Print View)

01 - 2 pounds carrots, peeled, each less than 1/2 inch thick
02 - 1 pound thin-sliced bacon
03 - 1/4 cup maple syrup

# Directions:

01 - Preheat oven to 400°F.
02 - Tightly wrap one slice of thin-sliced bacon around each carrot, starting at the thick end. Avoid overlapping layers while wrapping.
03 - Place the bacon-wrapped carrots on a wire rack set over a baking sheet to allow for even cooking.
04 - Bake in the center of the oven for 25 minutes, or until the bacon turns crispy and the carrots are tender.
05 - Remove from the oven and brush all sides of the carrots with maple syrup to coat evenly.
06 - Return to the oven and bake for an additional 8 to 10 minutes until the glaze caramelizes.
07 - Transfer the glazed bacon-wrapped carrots to a serving platter and serve immediately.
