# What You'll Need:

→ Chicken and Marinade

01 - 6 skinless boneless chicken thighs
02 - 1 teaspoon Shaoxing cooking wine or dry sherry wine or chicken broth
03 - 0.25 teaspoon salt
04 - 0.5 teaspoon garlic powder
05 - 0.5 teaspoon curry powder

→ Fried Rice

06 - 6 cups cooked jasmine rice or long grain white rice
07 - 4 large eggs
08 - 3 tablespoons soy sauce
09 - 2 tablespoons vegetable oil or neutral oil

→ Coconut Curry Sauce and Cheese

10 - 2 cups Yukon Gold potatoes or yellow russet potatoes, peeled and diced
11 - 0.75 cup onion, diced
12 - 1 tablespoon vegetable oil or neutral oil
13 - 414 ml full-fat coconut milk
14 - 1 teaspoon curry powder
15 - 1 teaspoon ground turmeric
16 - 1 teaspoon salt
17 - 1 cup mozzarella cheese or mozzarella cheddar cheese, shredded

# Directions:

01 - Slice the chicken thighs in half and combine with Shaoxing wine, salt, garlic powder, and curry powder. Mix thoroughly and set aside to marinate.
02 - Peel and dice potatoes into 2.5 cm cubes. In a large pot of boiling water, cook potatoes for 5 minutes until fork-tender. Drain and set aside.
03 - Heat 30 ml vegetable oil in a large pan over medium-high heat. Add cooked rice, breaking up any clumps. Season with soy sauce, then pour in the eggs. Toss to combine and cook until eggs are set. Transfer fried rice to a 23x33 cm baking dish, spreading evenly.
04 - Preheat oven to 260°C. In the same pan, heat 15 ml vegetable oil over medium-high heat. Sauté diced onion until softened. Add marinated chicken; brown each side for 5 minutes. Stir in cooked potatoes, coconut milk, ground turmeric, curry powder, and salt. Mix well until combined.
05 - Pour chicken and sauce evenly over fried rice in the baking dish. Sprinkle shredded cheese over the top. Broil in the oven for 5–10 minutes, watching closely until the cheese melts and is lightly browned. Remove and serve immediately.
