Light Sweet Strawberry Pancakes (Print Version)

# Ingredients:

→ Dry Stuff

01 - 225g all-purpose flour
02 - 16g white sugar (3 tsp)
03 - 12g baking powder (3 tsp)
04 - 1/4 to 1/2 tsp table salt

→ Wet Stuff

05 - 45g butter, fully melted
06 - 310g fresh milk
07 - 2 tsp vanilla extract
08 - 1 large egg

→ Mix-ins

09 - 125g fresh strawberries (cut into small 1cm chunks)

# Instructions:

01 - Stir the flour, baking powder, sugar, and salt together in a bowl until evenly combined.
02 - Melt your butter in a big microwave-safe container that'll fit all wet ingredients. Add your egg, vanilla, and milk to the melted butter and beat everything together.
03 - Add all wet stuff to your dry ingredients bowl and stir until barely mixed. Don't worry about small lumps. Let everything sit for 10 minutes.
04 - Cut strawberries into tiny 1cm squares and take off the green tops. After the batter has rested, carefully mix in the chopped strawberries.
05 - Warm up a skillet over medium heat. Brush a thin layer of butter or oil across it. Pour about 1/4 cup batter for each pancake onto the hot surface. Wait until you see bubbles pop on top, then flip them over. Cook until the middle isn't runny anymore. Keep going until all batter is used up.

# Notes:

01 - Letting the batter sit helps you get fluffier pancakes. You can let it rest longer if you want.
