Spicy Korean Tuna Cakes (Print Version)

# Ingredients:

→ MAIN

01 - 185g drained canned tuna
02 - 2 large eggs, whisked
03 - 20g finely diced green onion
04 - 45g finely diced onion
05 - 20g red bell peppers or cayenne chili, deseeded and diced small
06 - 20g green bell peppers or cayenne chili, deseeded and diced small
07 - 2 tsp regular flour
08 - 1/4 tsp fine sea salt
09 - 2 Tbsp mayo
10 - 1 tsp Korean chili paste (gochujang)
11 - Black pepper, as needed
12 - 1 cup Japanese breadcrumbs (panko), split in half
13 - Oil for cooking

→ GOCHUJANG MAYO DIPPING SAUCE

14 - 1/4 cup mayo
15 - 2 tsp Korean chili paste (gochujang)

→ SOY DIPPING SAUCE

16 - 1 Tbsp soy sauce
17 - 1 Tbsp water
18 - 1 Tbsp rice wine vinegar
19 - 2 tsp sugar

# Instructions:

01 - Mix the sauce ingredients in two separate bowls and put them aside for later.
02 - Stir 2 Tbsp mayo with 1 tsp gochujang in a small bowl until smooth.
03 - Add tuna, whisked eggs, green onion bits, diced onion, chopped peppers, flour, salt, spicy mayo, and half the panko to a bowl. Stir everything well.
04 - Pour the rest of your panko into a wide dish. Scoop mixture with an ice cream scoop to make even balls. Roll each in panko, press flat, coat again with crumbs, and set aside. Do this with all the mix.
05 - Warm a pan on medium-low. Add some oil and spread it around. Drop in patties without crowding. Cover and cook 5 minutes. Add a bit more oil on top, flip them over, cover again for 5 minutes. Flip once more and cook another 5 minutes until they're golden.
06 - Coat your air fryer basket with cooking spray. Put patties in without touching. Cook at 180°C for 8-10 minutes. Flip with tongs and cook another 8-10 minutes until nice and golden.
07 - Heat oven to 200°C. Put parchment on a baking tray. Arrange patties and lightly spray with oil. Bake 10 minutes. Take out, turn them over, spray again, and bake 10 more minutes until golden.
08 - Enjoy them hot with your favorite dipping sauce.

# Notes:

01 - An ice cream scoop makes your patties the same size.
02 - 1 Tbsp equals 15 ml, 1 Cup equals 250 ml
