Spicy jalapeño, creamy cheese, and crispy onion combine in these stuffed rings for a bold appetizer.

# What You'll Need:

→ Main Components

01 - 2 large yellow or sweet onions
02 - 8 ounces cream cheese, softened
03 - 1 cup shredded sharp cheddar cheese
04 - 1 to 2 jalapeños, finely diced, seeded for milder heat

→ Breading and Frying

05 - 1/2 cup all-purpose flour
06 - 2 large eggs, beaten
07 - 1 1/2 cups seasoned breadcrumbs or panko

→ Optional Additions

08 - 1/4 cup bacon bits
09 - 1/2 teaspoon garlic powder
10 - 2 tablespoons chopped scallions

→ For Frying

11 - Vegetable or canola oil, for deep frying

# Directions:

01 - Slice the onions into 1/2-inch thick rings and gently separate to retain sturdy layers suitable for stuffing.
02 - In a mixing bowl, combine cream cheese, shredded cheddar cheese, diced jalapeños, and any optional add-ins. Stir until uniform, then chill the mixture for 10 minutes.
03 - Fill the center of each onion ring with the prepared cheese mixture, using a spoon or piping bag to create a smooth, even surface.
04 - Place the stuffed rings on a parchment-lined tray and freeze for 20 to 30 minutes to firm the filling.
05 - Dredge each stuffed onion ring in flour, dip into beaten egg, and coat thoroughly with breadcrumbs. For a thicker crust, repeat the egg and breadcrumb coating.
06 - Heat vegetable or canola oil in a deep fryer or large pot to 350°F. Fry onion rings in batches for 2 to 3 minutes per side until golden and crisp.
07 - Transfer fried rings to a plate lined with paper towels to absorb excess oil. Serve hot with your choice of dipping sauces.

# Notes:

01 - For milder flavor, remove seeds from jalapeños before dicing. Freezing helps the cheese filling remain intact during frying.
