Throw the sugar, cream, butter and vanilla extract into a thick-bottomed pot.

Bring to a gentle bubble, always mixing with a wooden spoon.

Turn down the heat and keep stirring until mixture gets thicker, about 5-10 minutes.

Just before taking off the heat, mix in the baking soda until it's fully gone.
