Honey Pistachio Treats (Print Version)

# Ingredients:

→ Cookie Mixture

01 - 1/3 cup honey
02 - 1 cup unsalted butter, softened
03 - ½ cup white sugar
04 - 1 teaspoon vanilla extract
05 - 1 large egg
06 - ½ teaspoon baking soda
07 - 2 cups plain white flour
08 - ¼ teaspoon salt
09 - 1 cup pistachios, shelled and roughly chopped

→ Toppings

10 - 2 tablespoons honey (optional, to drizzle)
11 - 1 tablespoon sea salt flakes

# Instructions:

01 - Set your oven to 350°F (175°C) and place parchment paper on two trays.
02 - Blend the butter with the sugar until it looks fluffy and smooth.
03 - Stir in the honey, egg, and vanilla, making sure they mix in fully.
04 - In another bowl, combine the flour with the baking soda and salt.
05 - Slowly mix the dry ingredients into the wet ones until it becomes doughy.
06 - Fold in the pistachios gently, making sure they’re spread out in the dough evenly.
07 - Scoop up dough with a tablespoon, then roll into a ball. Set them on the trays with space between each.
08 - Use a spoon to press down on the dough balls a little to make them flat.
09 - Place the trays in the oven for about 12-15 minutes, or until the edges turn golden.
10 - Leave the cookies on the trays for 5 minutes to cool, then move them to a rack to finish cooling.
11 - While still warm, sprinkle salt flakes over the cookies.
12 - If you like, pour a little honey on top of the cookies after they’ve cooled.
