Set your oven to 350°F (175°C) and place parchment paper on two trays.

Blend the butter with the sugar until it looks fluffy and smooth.

Stir in the honey, egg, and vanilla, making sure they mix in fully.

In another bowl, combine the flour with the baking soda and salt.

Slowly mix the dry ingredients into the wet ones until it becomes doughy.

Fold in the pistachios gently, making sure they’re spread out in the dough evenly.

Scoop up dough with a tablespoon, then roll into a ball. Set them on the trays with space between each.

Use a spoon to press down on the dough balls a little to make them flat.

Place the trays in the oven for about 12-15 minutes, or until the edges turn golden.

Leave the cookies on the trays for 5 minutes to cool, then move them to a rack to finish cooling.

While still warm, sprinkle salt flakes over the cookies.
