In a large mixing bowl, toss sliced carrots and trimmed green beans with olive oil, honey, lemon juice, ground cinnamon, ground nutmeg, salt, and black pepper until the vegetables are well coated.

Arrange the coated carrots and green beans in a single layer on a rimmed baking sheet.

Roast in the preheated oven for 20 to 25 minutes. Stir the vegetables halfway through roasting to ensure even caramelization. Continue roasting until carrots are tender and slightly caramelized and green beans are crisp-tender.

Transfer roasted vegetables to a serving dish. Sprinkle with chopped fresh parsley before serving. Serve warm.
