# What You'll Need:

→ Vegetables

01 - 1 pound carrots, peeled and sliced
02 - 1 pound green beans, trimmed

→ Glaze

03 - 2 tablespoons olive oil
04 - 1/4 cup honey
05 - 2 tablespoons lemon juice
06 - 1 teaspoon ground cinnamon
07 - 1/2 teaspoon ground nutmeg
08 - Salt, to taste
09 - Black pepper, to taste

→ Garnish

10 - 1 tablespoon chopped fresh parsley

# Directions:

01 - Set oven temperature to 400°F (200°C) and allow to fully preheat.
02 - In a large mixing bowl, toss sliced carrots and trimmed green beans with olive oil, honey, lemon juice, ground cinnamon, ground nutmeg, salt, and black pepper until the vegetables are well coated.
03 - Arrange the coated carrots and green beans in a single layer on a rimmed baking sheet.
04 - Roast in the preheated oven for 20 to 25 minutes. Stir the vegetables halfway through roasting to ensure even caramelization. Continue roasting until carrots are tender and slightly caramelized and green beans are crisp-tender.
05 - Transfer roasted vegetables to a serving dish. Sprinkle with chopped fresh parsley before serving. Serve warm.
