Sweet Honey Chipotle Bowls (Print Version)

# Ingredients:

→ Honey Chipotle Chicken

01 - 1 pound chicken breasts with no skin or bones
02 - 1 tablespoon of olive oil
03 - 1 chipotle pepper from adobo sauce, chopped up, along with 1 tablespoon of that sauce
04 - Juice squeezed from half a lime
05 - 1 tablespoon of natural honey
06 - 1/2 teaspoon of powdered garlic
07 - 1/2 teaspoon of ground cumin spice
08 - 1 tablespoon of freshly chopped cilantro
09 - Salt and a sprinkle of fresh black pepper to your liking

→ Avocado Corn Salsa

10 - 1 cup of corn (grilled fresh or thawed frozen)
11 - 1 ripe avocado, diced after peeling
12 - 1 jalapeño pepper, de-seeded and chopped finely
13 - 1 tablespoon of chopped cilantro
14 - Juice from 1/2 lime
15 - 1/2 teaspoon of cumin
16 - Add some salt and black pepper to taste

→ For Serving

17 - 2 cups of rice that’s already cooked
18 - Cheese crumbles like queso fresco or cotija
19 - Lime wedges and chopped cilantro for garnishing

# Instructions:

01 - Grab a bowl, and mix olive oil, chopped chipotle, adobo sauce, lime juice, honey, powdered garlic, cumin, cilantro, salt, and pepper. Toss the chicken into a sealable bag and add the marinade. Work the marinade into the chicken by massaging it. Let it sit for 1-4 hours to soak in the flavors.
02 - Get your grill or skillet hot at a medium-high temperature (about 400-425°F). Coat it with some oil, put the marinated chicken on, and cook each side for about 5-6 minutes, or till the inside reaches 165°F. Let it rest for 5-10 minutes, then slice it up.
03 - In a bowl, combine the corn, avocado chunks, jalapeño, cilantro, lime juice, cumin, plus a bit of salt and pepper. Mix it carefully so it doesn’t mash up the avocado. Taste it and adjust as needed.
04 - Spoon some rice into your bowls, then add slices of chicken and top it with the avocado corn salsa. Crumble cheese over the top, and finish off with fresh cilantro and lime on the side.
