In a big mixing bowl, toss in your flour, sugar, baking powder, baking soda, and salt. Stir them well so everything's nice and blended—store in a container or jar when done.

When you're ready, turn on your griddle and set it to 325°F, or warm a large skillet over medium-high heat.

Take 2 cups of the mix, add milk, an egg, and vanilla if you'd like. Combine them in a bowl, stirring gently until there aren't many lumps but don't mix too much! If it’s too thick, add a bit more milk.

Spread butter on your hot griddle, then pour about 1/4 cup of the batter per pancake. Let it cook for roughly 2 minutes until bubbles pop up on top, then flip and let the other side cook for about a minute till it's golden.
