Simple Homemade Pancake Mix (Print Version)

# Ingredients:

01 - 4 teaspoons baking powder
02 - 1/4 cup white sugar (50g)
03 - 4 cups plain flour (520g)
04 - 1 teaspoon fine kosher salt
05 - 2 teaspoons baking soda

→ What You Need for Pancakes

06 - 2 cups of your pancake mix (260g)
07 - 1 big egg
08 - 1 1/2 cups milk
09 - A little butter to coat the pan
10 - A dash of vanilla flavoring (optional)

→ To Serve Them Up

11 - Top with butter, some syrup, or fresh berries—whatever you like!

# Instructions:

01 - In a big mixing bowl, toss in your flour, sugar, baking powder, baking soda, and salt. Stir them well so everything's nice and blended—store in a container or jar when done.
02 - When you're ready, turn on your griddle and set it to 325°F, or warm a large skillet over medium-high heat.
03 - Take 2 cups of the mix, add milk, an egg, and vanilla if you'd like. Combine them in a bowl, stirring gently until there aren't many lumps but don't mix too much! If it’s too thick, add a bit more milk.
04 - Spread butter on your hot griddle, then pour about 1/4 cup of the batter per pancake. Let it cook for roughly 2 minutes until bubbles pop up on top, then flip and let the other side cook for about a minute till it's golden.

01 - The dry pancake mix stays fresh in a sealed container at room temp for 6 months—or freeze it for up to a year!
02 - You can skip milk and eggs and just use 1 1/2 cups of water if you need to.
03 - Leftover pancakes freeze great for 2-3 months—warm them up in a toaster or microwave when you want!
