German Sausage Sauce (Print Version)

# Ingredients:

01 - 1 tablespoon cooking oil
02 - 6 tablespoons diced yellow onion
03 - 2 tablespoons hot curry powder, with extra for topping
04 - 1 cup (236 ml) tomato passata
05 - 2 teaspoons dark balsamic vinegar
06 - 2 tablespoons honey or 2 teaspoons regular sugar
07 - 1 teaspoon Worcestershire sauce
08 - 1/2 teaspoon table salt
09 - Water for thinning as needed

# Instructions:

01 - Pour cooking oil into pan and warm over medium heat. Toss in the diced onions and cook till soft without letting them turn brown.
02 - Add your curry powder and let it cook about 1 minute so all the good smells come out.
03 - Pour in the tomato passata, dark balsamic, honey or sugar, Worcestershire sauce, and salt. Let it come to a gentle bubble.
04 - Keep it bubbling gently for 10 minutes. Add a bit of water if it gets too thick.
05 - Give it a taste and tweak it till you like it. If it's too tangy, add a tiny bit of baking soda.
06 - Run it through a blender until it's totally smooth. Pour over cut German sausage and dust with extra curry powder on top.
