Pour cooking oil into pan and warm over medium heat. Toss in the diced onions and cook till soft without letting them turn brown.

Add your curry powder and let it cook about 1 minute so all the good smells come out.

Pour in the tomato passata, dark balsamic, honey or sugar, Worcestershire sauce, and salt. Let it come to a gentle bubble.

Keep it bubbling gently for 10 minutes. Add a bit of water if it gets too thick.

Give it a taste and tweak it till you like it. If it's too tangy, add a tiny bit of baking soda.

Run it through a blender until it's totally smooth. Pour over cut German sausage and dust with extra curry powder on top.
