Flavorful Greek Chicken Meatballs (Print Version)

# Ingredients:

→ For the Meatballs

01 - 500g minced chicken, fresh
02 - 1 large zucchini, grated fresh
03 - 100g feta cheese, crumbled
04 - 1 lemon, zested and juiced
05 - 1 fresh egg
06 - 1/2 cup plain breadcrumbs
07 - 20g of fresh herbs (parsley, dill, mint), chopped roughly
08 - Freshly cracked black pepper, to your liking
09 - 2 cloves of garlic, finely chopped
10 - 1/2 teaspoon of sea salt
11 - Olive oil, extra virgin, for brushing

→ For the Giant Couscous

12 - 1 cup of pearl couscous
13 - 1.5 cups of water
14 - A pinch of sea salt, added to taste
15 - 5g dill, minced fresh
16 - A teaspoon of extra virgin olive oil

→ For the Cucumber Salad

17 - 1 cucumber, sliced thinly
18 - 1 red onion, cut into fine slices
19 - Salt and black pepper, freshly ground, to taste

# Instructions:

01 - Get a big mixing bowl. Toss in the chicken mince, feta crumbles, grated zucchini, lemon zest, egg, garlic, breadcrumbs, salt, and your chopped herbs. Gently mix it all together until combined, but don’t overdo it—you just want everything evenly blended!
02 - Use your hands to form the meat mixture into 12 equal-sized balls, about as big as a golf ball. Brush a thin layer of olive oil all over them to help them brown up nicely while cooking.
03 - If using an air fryer, preheat it to 205°C and let the meatballs cook for 11 minutes close to the heating element so they caramelize perfectly. If using an oven, preheat to 220°C, place them in the upper third, and bake for 12-15 minutes, until done and golden.
04 - Warm a bit of olive oil in a pan over high heat, then toss in the giant couscous. Stir it for a minute or two until it’s lightly toasted. Add water and some salt, then let it simmer gently for 10-12 minutes until the couscous is tender but not mushy. Drain extra water if needed, then mix in olive oil, dill, a bit of seasoning, and a splash of lemon juice (around 20ml) to give it a zesty finish.
05 - Place the cucumber and red onion slices in a bowl. Drizzle with leftover lemon juice, season with salt and pepper, and give it a gentle toss. This side is so crisp and refreshing!
06 - Spoon the fluffy couscous onto plates, arrange the meatballs on top, and add a side of that vibrant cucumber salad. A finishing touch of a drizzle of olive oil will make everything shiny and even more delicious. Serve while it’s warm and fresh!
