In a small bowl, cream together the softened cream cheese, minced garlic, and Italian herbs until thoroughly blended. Divide the mixture evenly into four portions.

In a large bowl, combine ground beef with garlic powder, salt, and pepper. Mix until the seasonings are evenly distributed.

Divide the seasoned beef into eight equal sections. Roll each into a ball, then flatten into 1/4-inch thick patties. Place one portion of the cream cheese filling onto the center of four patties. Top each stuffed patty with one of the remaining patties and seal the edges completely to form four large, stuffed burgers.

Preheat grill to medium-high heat. Grill stuffed beef patties to desired doneness, flipping once during cooking. Near the end of grilling, place a slice of provolone cheese on each burger. Close lid and allow cheese to melt.

In a saucepan over medium heat, bring 1/4 cup of water to a boil. Add minced garlic and garlic powder, simmer until water is almost evaporated, about 5 minutes. Stir in heavy cream, parsley, salt, and pepper. In a small bowl, mix cornstarch with 1/4 cup water until smooth, then add to sauce. Continue cooking, stirring constantly, until sauce thickens, about 3 minutes. Remove from heat—sauce will thicken as it cools.

Place a stuffed burger on the bottom half of each brioche bun. Spoon generous amount of creamy garlic sauce over the burger. Cap with the top half of the bun and serve immediately.
