Frosted Velvet Brownies (Print Version)

# Ingredients:

→ Red Velvet Brownies Layer

01 - ¾ stick (85g) unsalted butter
02 - 1 cup (200g) white sugar
03 - ¼ cup (55g) soft brown sugar
04 - 3 whole eggs at room temp
05 - 1 egg yolk, separated
06 - 1 teaspoon of vanilla essence
07 - ⅓ cup (72g) neutral oil
08 - ¼ cup (25g) cocoa powder
09 - ¾ cup (90g) plain flour
10 - 1 tablespoon vinegar
11 - 1 tablespoon cornstarch mix
12 - ¼ teaspoon table salt
13 - ½ teaspoon red gel food dye
14 - ¾ cup white chocolate pieces (optional)

→ Topping Cream Frosting

15 - 4 oz (114g) softened cream cheese
16 - ¾ stick (85g) butter, softened
17 - 4 cups (480g) icing sugar, sifted
18 - 1 teaspoon pure vanilla essence

# Instructions:

01 - Preheat the oven to 350°F / 180°C (160°C fan) and line a square 9-inch cake pan with parchment paper.
02 - Melt the butter in short intervals with a microwave until it's all liquid. Combine both sugars with the melted butter in a big bowl and whisk until smooth.
03 - Stir in the eggs, egg yolk, and vanilla but don't overdo the mixing, or it'll lose texture. Gently mix in the cocoa and oil next, stirring just enough to combine.
04 - Take a small scoop of the batter, mix it with the red food dye separately, then pour it back into the main batter and stir together completely.
05 - Carefully fold in the flour, cornstarch, and salt with a spoon or spatula. Blend the vinegar into the batter. Add white chocolate chips if you like!
06 - Pour batter into the prepared pan and bake for 20-25 minutes. A toothpick inserted should come out with moist crumbs—not wet batter! Cool completely.
07 - Beat the soft butter and cream cheese until smooth, then slowly add in powdered sugar. Turn up the speed until fluffy, then mix in vanilla.
08 - Spread frosting over your completely cooled brownies before slicing into squares.

# Notes:

01 - For the best outcome, use scales to weigh out your ingredients exactly. Flour should be measured especially carefully to avoid dense brownies!
02 - Allow all cold ingredients to reach room temp before baking.
