01 -
Get your oven hot at 200°C (400°F).
02 -
Stir together the paprika, Italian herb blend, Cajun mix, red pepper flakes, fish spice, salt, black pepper, and oil in a bowl. Keep about 1 teaspoon aside for your tomatoes.
03 -
Rub the spice mix all over your fish piece, making sure to cover both sides well.
04 -
Pour oil in a pan that can go in the oven and turn to medium heat. Cook fish just for a minute on each side until you see some browning. It won't be done yet. Put it on a plate for now.
05 -
Using that same pan on medium heat, throw in the cherry tomatoes, olives, parsley, thyme, chopped garlic, that teaspoon of spice mix you saved, water, and a bit of salt and pepper. Stir and cook for about 3 minutes.
06 -
Lay your partly cooked fish in the middle of all those veggies in the pan. Put the butter on top of the fish. If your pan can't go in the oven, move everything to a baking dish now.
07 -
Stick it all in your hot oven for about 10 minutes until the fish is fully done.
08 -
Take it out and eat it right away with whatever side dish you like.
