Fish Bake with Tomatoes (Print View)

Fish pieces pan-seared then oven-finished with sweet tomatoes, tangy olives and fresh herbs for a tasty Mediterranean meal.

# What You'll Need:

→ Fish Mix

01 - 1 piece of fish fillet
02 - 1 teaspoon of paprika powder
03 - 1 teaspoon of Italian herb blend
04 - 1 teaspoon of Cajun mix (or try Old Bay/Creole blend)
05 - ½ teaspoon red pepper flakes
06 - 1 teaspoon fish spice blend (if you have it)
07 - ½ teaspoon regular salt
08 - ½ teaspoon ground black pepper
09 - 3 tablespoons of oil for cooking

→ Veggie Topping

10 - 2 cups small cherry tomatoes
11 - ¼ cup pitted olives
12 - 2 sprigs of parsley, fresh
13 - 2 sprigs of fresh thyme leaves
14 - 3 cloves garlic, finely chopped
15 - 3 tablespoons butter with salt
16 - 2 tablespoons plain water
17 - Small amount of salt and pepper

# Directions:

01 - Get your oven hot at 200°C (400°F).
02 - Stir together the paprika, Italian herb blend, Cajun mix, red pepper flakes, fish spice, salt, black pepper, and oil in a bowl. Keep about 1 teaspoon aside for your tomatoes.
03 - Rub the spice mix all over your fish piece, making sure to cover both sides well.
04 - Pour oil in a pan that can go in the oven and turn to medium heat. Cook fish just for a minute on each side until you see some browning. It won't be done yet. Put it on a plate for now.
05 - Using that same pan on medium heat, throw in the cherry tomatoes, olives, parsley, thyme, chopped garlic, that teaspoon of spice mix you saved, water, and a bit of salt and pepper. Stir and cook for about 3 minutes.
06 - Lay your partly cooked fish in the middle of all those veggies in the pan. Put the butter on top of the fish. If your pan can't go in the oven, move everything to a baking dish now.
07 - Stick it all in your hot oven for about 10 minutes until the fish is fully done.
08 - Take it out and eat it right away with whatever side dish you like.

# Notes:

01 - Make sure your pan won't get damaged in the oven before you use it that way.
02 - You'll know the fish is done when it breaks apart easily with your fork.
