Fluffy Cloud Bread (Print Version)

# Ingredients:

01 - 4 big eggs, yolks and whites separated
02 - 2 ounces of reduced-fat cream cheese
03 - 1/2 a teaspoon sea salt
04 - 1/2 teaspoon cream of tartar powder
05 - A teaspoon of dried Italian herbs
06 - 1/4 to 1/2 teaspoon of garlic seasoning

# Instructions:

01 - Crank up the oven to 300°F. If you've got convection, turn it on. Lay parchment paper on a couple of large baking pans.
02 - Pull apart the egg yolks and whites. Put the whites in a mixer with a whipping attachment. Toss in the cream of tartar and whip at high speed until stiff peaks form. Scoop it into another bowl afterward.
03 - Toss the cream cheese into the now-empty mixer bowl and beat till smooth. Then, one by one, add the yolks. Scrape down the sides. Beat till silky smooth, then mix in the herbs, salt, and garlic.
04 - Gently combine the whipped egg whites into the yolk mixture. Be super careful so the fluffiness sticks around. Scoop out 1/4 cup portions, drop them onto baking pans, and spread into 4-inch wide rounds about 3/4 inch tall. Keep space between each one.
05 - Bake with convection for 15–18 minutes or use a conventional oven for up to 30 minutes. The outside should turn golden and firm. Shake gently—nothing should wobble in the middle. Let 'em cool on the tray before removing, then enjoy!

# Notes:

01 - These fluffy pieces can be kept in a sealed container in the fridge for a few days, but they’re tastiest if eaten in the first 12 hours.
02 - Start light on the garlic seasoning the first time around. Some might find 1/2 teaspoon to pack a punch.
