01 - 1 pound smoked sausage, sliced into 1/4-inch rounds

07 - 1 can (14.5 ounces) diced tomatoes, undrained

# Directions:

01 - Heat olive oil in a large heavy-bottomed pot or Dutch oven over medium heat. Add the smoked sausage slices and cook, stirring occasionally, until browned and slightly crisp, about 5-7 minutes. Remove the sausage with a slotted spoon and set aside, leaving the rendered fat in the pot.
02 - Add chopped onion, green bell pepper, and red bell pepper to the pot. Cook, stirring frequently, until the vegetables are softened and the onion is translucent, 5-7 minutes. Use a wooden spoon to scrape up any fond from the bottom of the pot.
03 - Stir in minced garlic and cook for 30 seconds until fragrant. Add chili powder, smoked paprika, cayenne pepper, dried oregano, black pepper, and salt, stirring until the vegetables are coated and the spices are aromatic.
04 - Return the browned sausage to the pot. Add diced tomatoes with their juice, tomato sauce, kidney beans, pinto beans, rice, and chicken broth. Stir to combine all ingredients thoroughly.
05 - Bring the mixture to a gentle boil over medium-high heat, then reduce to a simmer. Cover the pot and cook for 20-25 minutes, until the rice is tender and most of the liquid is absorbed. Stir occasionally to prevent sticking.
06 - Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork. Garnish with chopped green onions and serve with hot sauce if desired.

01 - For deeper flavor, allow the sausage to brown thoroughly before removing from the pot. Adjust cayenne pepper and hot sauce according to preferred spice level.
