Beef Sirloin Bistek Tagalog (Print Version)

# Ingredients:

→ Meat

01 - 1 1/2 lbs sliced beef sirloin, cut very thin

→ Marinade

02 - 5 tablespoons soy sauce
03 - 4 calamansi or juice from 1 lemon
04 - 1/2 teaspoon black pepper, ground

→ Aromatics

05 - 3 cloves garlic, finely chopped
06 - 3 medium onions, cut into rings

→ Other

07 - 4 tablespoons cooking oil
08 - 1 cup water
09 - 1 pinch salt

# Instructions:

01 - Mix the beef with black pepper, soy sauce and lemon juice (or calamansi) in a bowl. Let it soak for at least an hour, but leaving it overnight works even better.
02 - Warm the cooking oil in a pan and fry half the onion rings until they're soft and golden brown. Take them out and save them for later as a topping.
03 - Save the liquid from the beef but drain the meat. In the same pan, quickly cook the beef for about a minute on each side. Take it out and put it aside.
04 - If the pan looks dry, add a bit more oil. Cook the garlic and the rest of the raw onions until the onions get soft.
05 - Add the saved marinade liquid and water to the pan. Let it all come to a boil.
06 - Put the beef back in the pan. Cover it and let it cook until the meat gets tender, adding more water during cooking if needed.
07 - Add more black pepper and salt if you want. Put the golden onions you saved on top and serve it hot.
