Grab a mandoline and cut the watermelon into super-thin slices, almost paper-like.

Put those watermelon slices in the freezer for about 10 minutes. It makes them firmer.

Lay out your chilled watermelon slices on a plate. Sprinkle with basil, crumbled feta, and the crushed pistachios.
