Set your oven to 200°C. Clean the potatoes well, chop them into chunks, and toss them in your baking tray.

Pour half the olive oil on your potato chunks. Scatter thyme, oregano, salt, and pepper over them. Mix everything together so each piece gets coated.

Drop the feta block in the middle of your dish. For better taste, dip one side in the potato spices before turning it over. Put in the garlic and two lemon pieces too. Drip the leftover oil across everything.

Stick it all in the oven for about 45-55 minutes until your potatoes turn crunchy and gold-colored. Watch the garlic—take it out after 35 minutes if it's browning too fast.

When the garlic cools down, push the soft cloves out. Squash them into a paste with your knife. Add this paste, juice from the other lemon bits, and cut basil to your dish. Stir the potatoes and feta gently to mix all flavors.

Pour honey on top and throw on more fresh basil for color and a bit of sweetness. Enjoy it while it's hot.
