Fire up your oven to 400°F. Lay some parchment paper on two big baking sheets.

Use a floured surface to slice each pastry sheet into 6 rectangular pieces around 4½x3 inches. You’ll end up with 12 pieces.

Spread the pastry rectangles out on the baking pans, leaving about an inch of space around each piece.

Use a fork to poke holes in the middle area of each pastry, leaving a border of about ½ inch around the edges so the edges puff up and the centers stay flat for the filling.

Mix together the cream cheese, sugar, and almond essence in a medium bowl until smooth and creamy.

Spread about a tablespoon of the cream cheese mix on each pastry, and spoon 2 tablespoons of cherry filling on top.

In a small bowl, whisk the egg and water together, then brush this mixture around the edges of the pastries using a pastry brush.

Bake for 15-18 minutes or until the pastries puff up and turn a nice golden color.

Take them out of the oven. Sprinkle some powdered sugar on top and let them cool slightly before taking a bite.
