Crunchy Tofu BBQ Bites (Print Version)

# Ingredients:

→ Base

01 - 1 pound extra-firm tofu

→ Batter

02 - 1 cup plant-based milk
03 - 3/4 cup plain flour
04 - 2 tbsp corn flour
05 - 1 tbsp garlic granules
06 - 1 tbsp onion flakes
07 - ¼ tsp regular salt
08 - ¼ tsp freshly cracked pepper
09 - ¼ tsp spicy red pepper

→ Coating

10 - 1 cup crunchy Japanese breadcrumbs
11 - ¼ tsp table salt
12 - ¼ tsp ground pepper

→ Sauce

13 - 1 cup plant-based barbecue sauce

# Instructions:

01 - Drain the tofu for half an hour with a tofu squeezer. If you don't have one, stack a plate on top of your tofu with something heavy like a cooking pot.
02 - Get your oven hot at 400°F (200°C).
03 - After pressing, cut your tofu however you want - little squares, triangles, or chunks.
04 - Grab a big bowl and stir together the plant milk, flour, corn flour, garlic granules, onion flakes, salt, and both peppers till it's all smooth.
05 - In another bowl, mix your crunchy breadcrumbs with the salt and pepper.
06 - Drop tofu pieces into the wet mix and flip them around so they're covered completely.
07 - Take each soggy piece and roll it in the breadcrumbs, making sure all sides get covered.
08 - Lay your coated tofu on a tray with baking paper and cook for 20 minutes.
09 - Take the tofu out and put it in a bowl with the barbecue sauce. Gently turn pieces to cover them all.
10 - Put your saucy tofu back on the paper-lined tray and cook another 10 minutes.
11 - Pull it out, brush on more sauce, and eat right away while it's still super crunchy.

# Notes:

01 - Plant milk from soybeans works great because it's rich, but milk made from cashews or oats will do the trick too.
02 - Japanese-style panko gives you the crunchiest results, but you can use whatever breadcrumbs you've got.
03 - Just grab BBQ sauce from the store or whip up your own if you're feeling fancy.
04 - If you can't eat gluten, swap in gluten-free flour and crumbs, but know they won't get quite as crispy.
05 - Eat it straight away for the best crunch, or keep leftovers in the fridge for 3-4 days in a sealed container.
